Sausage Seasoning, Sausage Eggs & Breakfast Bowls



Just a couple of weeks ago, one of my kids said, "I love any kind of sausage you make." A tiny bit of pride rose in my heart because I know he means the homemade sausage seasoning (with ground meat). I love that my people love it. We have some of our favorite meals and celebration meals from this sausage seasoning - biscuits and gravy, egg frittata, sausage egg bowls, sausage eggs, and our annual breakfast casserole for Christmas morning!


It was my first term overseas married, and as our team leaders were leaving the field, she gave me a packet of sausage seasoning. We could get ground pork in Slovakia, but we could not get "sausage" American style - we sure could get špekáčeky (and other Slovak sausages)! I began using her packets and made that familiar breakfast sausage taste. From then on (20 years ago), I have more often than not flavored my own sausage.


Fast forward to India 5 years later - I bought some packages from Amazon (I cannot find them anymore or I would link to them). Even in India (the land of CHICKEN - no beef for Hindus and no pork for Muslims) we could still have American sausage with ground chicken. Then one day, I ran out of my packets and it took a while, but I figured out the recipe by searching the ingredients I liked and knew was in those packets and trying different proportions. I have been making this and using it for about 10 years! And even now, when I'm in the US, I often make it homemade to still get the same sausage taste with a leaner white meat. I am aware you can purchase turkey sausage, but I prefer chicken (both in price, nutritional value, and in flavor).


Here is a little more explanation:




OIL

—The chicken is lean, so I cook it in a little olive oil for this recipe.


Add the SEASONING MIX

—Right as you put the meat into the pan, you add the sausage mix and cook it into the meat as it is cooking. You do NOT cook the meat first and add seasoning late like taco seasoning.


SAGE

—I often add extra sage when I am cooking it. I pour some into my hand and rub my hands together as it goes into the meat. The smell says "sausage" in our house.


COOK

—Cook until browned as you like it.




Sausage Eggs

This morning we had "eggs sausage" after cooking the sausage, you add scrambled eggs and scramble and cook it all together! Yum! Add what ever sides (toast, oatmeal, put in a wrap with cheese) you like or eat just like this.






Here is one of our favorite ways to enjoy the sausage:

We often eat egg bowls for breakfast - and it it extra yummy if you add breakfast sausage (and can do less or no egg whites since you have the meat protein). Some of my kiddos don't love all the veggies, but they make it a sausage, egg, and cheese with rice (or grits) and it's a favorite in our house!
